Inspired by the year of Quebec City’s founding on the very exact site of this Bar, the new 1608 Wine & Cheese Bar will offer one of the largest varieties of top Quebec cheeses in Canada, sourced from its unique Cheese Room, and coupled with the top wine offerings the world has to offer.
Overlooking the St. Lawrence River, this new bar will showcase one of the province’s most stunning views.

We spent two nights and found them to be completely enjoyable with very attentive staff, luxurious and clean rooms, walkable to the historic shopping and dining establishments, and good food. Plenty of in-hotel restaurants from cozy to sophisticated. Concierge was very helpful. We will definitely be coming back. I loved the toboggan slide on site, the funicular was easy to use. The glacier ice bar fun. The hotel is beautifully finished at every turn. Highly recommend.

We came to Quebec City and stayed here for 4 nights to celebrate our granddaughter’s birthday. We stayed in one of the one bedroom suites overlooking the river and toboggan ride. We could walk to the shops and the river but it was extremely cold. The last time I was at this hotel was about 60’years ago as a kid so it was pretty amazing to return and share this moment as a #grandparent with my granddaughter. We loved the hotel and I highly recommend the Club Level. The staff there were amazing and very welcoming and knowledgeable. The Concierge Stephanie was able to secure a booking for us to go skiing, Danielle at the lobby Concierge secured our dog sledding booking, and Emma at the Club checked us in and gave us three free tickets for the toboggan ride, she was awesome! Everyone went above and beyond to ensure our stay was amazing. The food st the club was eclectic and varied each night. We loved the charcuterie! In the morning we requested scrambled eggs without milk and they brought us eggs they way we needed them from the kitchen. Thank you for an amazing stay!
We stayed at the hotel during our visit to Quebec City. We were astonished with the historic charm of the hotel. We stayed during the holiday season so there was understandably a large crown in the lobby most of the time since many people come to see the hotel. They keep some sections reserved for guests, which is a nice break from the crowd. We stayed in the Gold section of the hotel which is comprised of the top floors and includes access to the Gold lounge. The lounge was a great place to relax and unwind after a long day of activities. We were offered free non alcoholic beverages and snacks. The staff was top-tier, both helpful and readily available to assist with anything. There is a daily resort fee and valet fee that we weren’t completely made aware of at check in. And the rooms were a bit smaller than we’d hoped, the bathroom can feel tight at times. Room service was great but we did find some things lacking like a tissue still in our bed after it was made, or no shower gel in the shower. The shops downstairs had some great finds and we found that the location could not be beat! You are within walking distance to all of the great places you want to visit during a stay. The sled in the back is also an enjoyable perk - you get a free pass when staying in the hotel. Make sure to layer up and grab some hot beverages as the line gets extremely long and we found that a night sled was our favorite but the dropping temps do demand layers. We waited well over an hour and a half but it was worth it. We will definitely be back.
