Inspired by the year of Quebec City’s founding on the very exact site of this Bar, the new 1608 Wine & Cheese Bar will offer one of the largest varieties of top Quebec cheeses in Canada, sourced from its unique Cheese Room, and coupled with the top wine offerings the world has to offer.
Overlooking the St. Lawrence River, this new bar will showcase one of the province’s most stunning views.

The hotel itself is beautiful, but for a 5-star property, the service at the front door is surprisingly poor. Assistance with strollers and luggage was virtually nonexistent. Both the main ramp and the lobby ramp were blocked off by a green tarp, forcing guests to carry everything up the stairs. Imagine juggling five bags and a stroller while three doormen and a valet stand by, watching like deer in headlights without offering to help — truly bizarre for a hotel of this caliber. Thankfully, on one occasion, another guest kindly held the door open for us.nnAdding to the frustration, when a so-called “VIP” guest arrived with security, the entire staff suddenly sprang into action, falling over themselves to assist. It seems help is reserved for those they choose to help. The only person who actually offered a hand received a $20 tip from me — because he was the only one who truly earned it.nnOn the positive side, the restaurant staff were excellent — friendly, attentive, and professional. Breakfast was delicious and well presented, though dinner felt a bit overrated for the price and reputation. The housekeeping and cleaning staff were also fantastic — warm, thorough, and genuinely attentive to detail.nnOverall, it’s a lovely property with standout back-of-house and dining staff, but the front-facing service desperately needs improvement if the hotel wants to live up to its 5-star name.
For some, this property might feel a little dated at first, but the staff, service, and of course the location and charm of the château truly can’t be beat! We booked two nights through the Chase Travel Portal since it’s one of The Edit properties, and were warmly greeted and recognized upon arrival. There were some sweets waiting for us in the room as welcome amenities, and we were upgraded to a lovely city-view room.nnBreakfast was very good — lots of variety and a made-to-order egg station. In-room dining was great too. The gym and pool were both very nice and well maintained. The bathroom was on the smaller side but well designed and didn’t feel cramped at all.nnI noticed a miscellaneous charge a few days after checkout, and when I emailed to ask about it, I got a reply within an hour and the issue was resolved right away. Huge thanks to AR Senior Clerk Christine for the amazing service!
We had the pleasure of staying 3 nights and 4 days.nThe location is fabulous, so much history and by the water.nThe hotel was amazing, loved the architect, and history it had within the walls.nThe rooms were okay, the window for the views is small. Our first room was a city view. Though when we looked out we had a view of the construction happening in the corner. So after sharing our disappointment we were moved to a river view room. The room was big, bathroom a decent size but all very standard. The room was missing our robes and mugs for tea. When we called housekeeping we got them but it took almost thirty mins. Check In and Check Out was okay. Nothing outstanding. All kind, courteous , but not much of a personal connection. Like what brings us to Quebec, etc. Overall a nice stay just some focus on the details.
An unforgettable stay at Fairmont Le Château Frontenac!nnOur visit felt like stepping into a real-life castle — the architecture, the view of Old Quebec, and the atmosphere were absolutely magical. The staff were warm and welcoming from check-in to check-out, making us feel truly valued as guests. Our room was elegant, clean, and had a stunning view of the St. Lawrence River.nnWe enjoyed walking around the historic area right outside the hotel — everything was within reach: restaurants, boutiques, and beautiful photo spots. The breakfast buffet and cocktails at the bar were top-notch.nnDefinitely worth the visit if you’re in Quebec City — whether you’re staying overnight or just stopping by to explore, the Château is a must-see landmark that captures the charm and history of Quebec.
We had a wonderful stay at the Château Frontenac in Quebec City. It is such a beautiful establishment full of charm, presence, and history, perfectly located in the heart of Old Québec.n•nThe lobby, bar, and restaurants were buzzing with energy even though it was not peak season. We have stayed at several Fairmont locations, and this was the first time we had seen such a lively atmosphere in the common areas.n•nService was excellent all around from valet and reception to Bar 1608, Le Sam Bistro, and room service. Every staff member we encountered was polite, professional, and eager to please.n•nOur junior suite was spacious, spotless, and perfectly situated with a stunning view of the city and port. We especially loved our afternoon at Bar 1608, sampling beautifully crafted cocktails while enjoying the cozy decor and breathtaking view.n•nWe truly appreciate every Fairmont experience, and this stay was no exception. We will definitely be back. Thank you!
