Inspired by the year of Quebec City’s founding on the very exact site of this Bar, the new 1608 Wine & Cheese Bar will offer one of the largest varieties of top Quebec cheeses in Canada, sourced from its unique Cheese Room, and coupled with the top wine offerings the world has to offer.
Overlooking the St. Lawrence River, this new bar will showcase one of the province’s most stunning views.

We stayed at the hotel during our visit to Quebec City. We were astonished with the historic charm of the hotel. We stayed during the holiday season so there was understandably a large crown in the lobby most of the time since many people come to see the hotel. They keep some sections reserved for guests, which is a nice break from the crowd. We stayed in the Gold section of the hotel which is comprised of the top floors and includes access to the Gold lounge. The lounge was a great place to relax and unwind after a long day of activities. We were offered free non alcoholic beverages and snacks. The staff was top-tier, both helpful and readily available to assist with anything. There is a daily resort fee and valet fee that we weren’t completely made aware of at check in. And the rooms were a bit smaller than we’d hoped, the bathroom can feel tight at times. Room service was great but we did find some things lacking like a tissue still in our bed after it was made, or no shower gel in the shower. The shops downstairs had some great finds and we found that the location could not be beat! You are within walking distance to all of the great places you want to visit during a stay. The sled in the back is also an enjoyable perk - you get a free pass when staying in the hotel. Make sure to layer up and grab some hot beverages as the line gets extremely long and we found that a night sled was our favorite but the dropping temps do demand layers. We waited well over an hour and a half but it was worth it. We will definitely be back.

From the moment we arrived, the staff’s attentiveness and warm hospitality made us feel incredibly special.nnThe surprise champagne and greeting upon learning about our anniversary was such a thoughtful gesture that added a personal touch to our celebration. My wife, daughter, and I were delighted and deeply touched by this kindness.nnThank you for making our special day even more memorable. We look forward to returning for future celebrations and would highly recommend your hotel to anyone seeking a truly exceptional stay.
1. Fantastic staff.n2. Great gym.n3. Best hotel buffet breakfast I’ve had - and been to lots of top places.n4. The Christmas Brunch was great vibe - nice room.n5. The Christmas dinner had a good bit of food pulled from the brunch so I wouldn’t recommend if you did the breakfast. Should have come with wine.n6. The young lady running the Cookie decorating needed help, for five stars it wasn’t run efficiently or festively the night we went - although dressed like an elf - she was overwhelmed and not friendly. Management moment.n7. Should have a spot to buy snacks waters etc. delivery fee to room plus required tip was excessive if just ordering a drink since they didn’t allow take away drink from the bar.n8. Other shops on site were top. Cool local stuff down by Starbucks.n9. The holiday high tea was worth it- great pianist and nice selection. You won’t leave full but for a one time thing - nice.n10. The location is absolutely awesome. The pool and hot tub nice and relaxing.n5/5 - you won’t regret it. Well done.
Beautiful historic hotel in downtown Quebec.nFood is amazing, service is great, valet service parked our Pickup somewhere covered.nnThe room was quite luxurious, just the elevator across the hall made some noise. If you are a light sleeper stay away from the elevator shafts.nWe stayed 3 nights and would loved to stay even longer. There is so much in and outside the hotel to explore. Everything is in walking distance, didn't need the car at all.nWill definitely come back. Maybe in the summer or when there is a lot of snow.
We loved out stay at this hotel. It is the heart of the city. The staff is amazing. We stayed in a Gold Signature Suite and it was worth every penny! The views from our room were spectacular. The 14th floor lounge available to the Gold level was fantastic and we enjoyed breakfast there every morning.nnThe only downside was the fact that the hotel allows people not staying at the hotel to crowd into the lobby. As such, it was hard to get to the elevator and almost impossible to enjoy the shops at the hotel. There are times when the general public are restricted and we really enjoyed the beauty of the lobby then.nnOther than that, everything is walkable from the hotel and the accommodations are superb.
