A cool basement bar under Pops Champaign bar on the corner of State and Ohio. Upon entering Pops tell the host you want the Watershed, you'll be directed to go to the right back side and take the stairs under the big "W" You'll be treated to a very relaxed atmosphere and drinks.
Really happy this place is here. Normally I don’t want to write a review for a place I only went to once but I’m really happy we went here. After I appease my wife by taking her upstairs I prefer a place with a chill vibe, fun cocktails, and comfortable chairs that aren’t high-tops. The guys working the Saturday night were super chill. Asked our names, talked about getting good deals on glassware, where to get a good smash burger, and of course D&D. Mezcal cocktails went down way too smooth, can’t want to go back and get more.
Great bar below the Pop champagne bar. We accidentally had a drink upstairs before realizing our error. As someone not a common cocktail drinker this is definitely a place I would return to. We thought the bartender, who the other reviews labeled to be pretentious and the owner, was neither as he was great and also not the owner. Highly recommend the Malört infused combo drink Remedial chaos theory before the season 1 menu ends.
Absolutely fantastic bar. The bartenders are so attentive and kind S/O to Logan, Michael and Stephen!, the drinks are fabulous, and the food is top notch. Overall, a great spot for anyone in River North!
Unlike their neighbors upstairs watershed understands their customer base, and what it takes to welcome their customers. The servers/bartenders are down to earth, friendly, and most of all relatable. They can make a stiff consistent drink every time. Their knowledge on their selection is adamant. The decor is a little uninspiring, but the kicker is that’s the beauty of it. It is suppose to be a retro basement that leaves little awe. Will definitely stop by every time I am in town.
We were lucky enough to visit Watershed during its soft re-opening in July 2022. Logan's cocktail menu is creative, unique, and fantastic. We loved talking to him and trying some of his off-menu creations - stayed for a couple hours instead of the one drink we initially intended. He clearly loves what he's doing and it comes through in every drink. Definitely worth checking out now that they're officially open!
Best bar in Chicago. Impecable service, delightful drinks and incredible staff. Once you go here, you won’t want to go anywhere else.
Drinks were okay, space was loungey and comfy, the dude who was serving us though had the most appalling air of self righteousness and pretentiousness that it was laughably cringy. A walking L. He actually ruined the entire space, which is impressive.
You actually have to enter Pops first to get to this place. Reminds me of my basement from the 70’s—-but in a good way. Small space inside but servers are super friendly. Only downside is that for a bar that advertises a selection of local craft beer, most selections were out of stock and midweek to boot. Also only 2 beers on draft. More of a cocktail place if you like cozy and nostalgic.
Wow not good. Loud music. Server who was the owner was condescending and actually a jerk. Drinks maybe craft but lacked originality and taste. By the way the cab franc you recommended was awful. Would not recommend wasting your money or time. Just my opinion.
