The cuisine at Mercuri is "New Montreal" or "Modern Montreal", which is a 'cuisine of cuisines', showcasing mainly Quebec produce, as well as, ingredients from all over the world - ingredients that are at its peak. It is not a style, or a particular dish, but how the ingredients are combined. At its heart are French and Italian roots, but the inspiration is truly the cultural mosaic that makes Montreal so unique.
