Story

The first and only authentic Tonkotsu Ramen noodle shop in Montreal that makes everything in house (from scratch) with no MSG.
In order to make our broth, we use only top quality organic ingredients. It starts with 50 lbs of pork bones which must be individually broken to expose the marrow. It is then added together with other ingredients and simmered for 12 hours until it is reduced down to 25% of the original volume. For 12 hours it must be skimmed and stirred to ensure that it does not burn. We do NOT add starch to artificially thicken the broth.
Our noodles are the only ones to be made fresh in Montreal. Our trained personnel, use specially treated water with the perfect pH to get the perfect texture.
We also make numerous condiments to accompany the ramen and ice creams to complete your meal.
We maintain the strictest traditions in order to serve you the best, most authentic ramen.

Excellent ramen, better than some of what I've tried in Japan. What they're doing here is incredible. Waiting time can be 2 hrs or more so try to avoid peak hours.nnThe thin noodles picked up the broth well and everything was just delicious. Very glad I came here!
Honestly the ambiance saved this place for me. I ordered the milk vegan vegetable ramen to try something new and it lacked flavor in my opinion... want as umami nor salty as other authentic ramen I've had.nService was great and the staff were young, and socializing alot, but still professionals and getting the job done which I like. The seating is outdoor and indoor, a big mood. But yeah that food... was not it. I would literally come here just to sit or take a drink.
Great vibes and food was really good. Only complaint is that the broth was only luke warm but everything else was on point. Noodles were great, broth was flavourful and the chashu was tender and portion was very generous. Also ordered the spicy karaage which was also very good, really crispy and the sauce was tangy with good heat.nnRestaurant is small though so expect to wait. I came at around 6 on a Monday and it was already full with 8 people waiting in line.
Stopped for a quick ramen with my son who lives in Montreal and loves this place - I can see why. The ramen broth was out of this world - flavourful, rich, indescribable! The noodles were perfect, the pork was perfect, everything was perfect, except, perhaps, the egg, which was kind of pungent. Did not spoil the dish, though.nWe also shared some crispy chicken “bites” - just as delicious as the ramen.nTwo ramen and the shared chicken was too much; we had to take a couple pieces of chicken home.nAll in all, I see why our so e loves this place, and if I lived in Montreal I’d soon become a regular.nWe walked by a couple times and there were lineups - obviously it’s a popular spot.
Vegetarian soup not the veg milk one tastes good but not super special, though the toppings, sides and everything are definitely very thoughtful and well made. According to our friends the chicken soup is REALLY good. Takoyaki and shaved ice are standard tasty.nWe waited at least an hour, was pretty annoying that the wait time increased as we were waiting, it was just a thursday night. The waiter was very nice though.
