Story

The first and only authentic Tonkotsu Ramen noodle shop in Montreal that makes everything in house (from scratch) with no MSG.
In order to make our broth, we use only top quality organic ingredients. It starts with 50 lbs of pork bones which must be individually broken to expose the marrow. It is then added together with other ingredients and simmered for 12 hours until it is reduced down to 25% of the original volume. For 12 hours it must be skimmed and stirred to ensure that it does not burn. We do NOT add starch to artificially thicken the broth.
Our noodles are the only ones to be made fresh in Montreal. Our trained personnel, use specially treated water with the perfect pH to get the perfect texture.
We also make numerous condiments to accompany the ramen and ice creams to complete your meal.
We maintain the strictest traditions in order to serve you the best, most authentic ramen.

This was our first visit and they did not disappoint! It was a little bit tricky to find the actual entrance way to the restaurant but that only added to the charm! The decor and music of the restaurant has an interesting vibe and creates a modern yet traditional dining atmosphere at the same time. All of the servers were very friendly and attentive. The food arrived promptly and was very well prepared. Our appetizer of spicy chicken karage was light crispy and flavorful. The ramen had a tasty rich umami broth without being overpowering. It had a clean clear flavor and the noodles silky and al dente. We also ordered their special which was a spicy noodle. This was also quite delicious but heed the server's warning that even level 2 is probably a bit much for most! We enjoyed it very much and it definitely woke up our taste buds! Overall this was a very fine dining experience worthy of their high rating.
We had pork and sesame broth thick noodles Ramen. Chicken and pork. Sesame broth was too heavy for me. The soup was colder than expected. Spicy chicken entree was good. Rice with pork entree was tasty. The place was packed on Sunday at 2. We waited for 20 minutes for a table. 4 stars overall.
Attempt #2 trying to go here worked as the first time on a Friday night was told 1.5 hour wait and you cant make reservations. Second time for a weekend lunch they had implemented a new system which was much better where there is a tablet where you enter your name, number of guests and phone number and you will be texted when to come back when a table is available. Our estimate was 15 min to 45 min but ended up being much closer to 10 minutes.nnYokato was great but hurt by high bar expectations in terms of the Michelin Guide reference. Service was very good, as was the ambiance and food just nothing that blows you away which for better or worse what you expect when you hear the name Michelin name.nnAfter getting the text me and my friend were led to our tables. For lunch you fill in a little sheet with what sides you want, the broth, meats and any extras which I appreciated for the efficiency.nnWe ordered the Pork broth with Pork and the Chicken Broth with Chicken. Both were very good and savory, and didnt take too live to arrive after ordering. You also get a little caddy with add-ons for the soup which were spicy sesame seeds in oil, regular sesame seeds, pickled radish and pink onions I think.nnOverall the service, system and food were all very good, just not mindblowing or novel which is what I kindof expected with any association for the Michelin Guide
Delicious Ramen! One of the best I've had.nTook one star off because the service was slow- took about 45 minutes for the ramen to be served, and it wasn't served hot enough, one of the sides I ordered for the soup fried garlic arrived half way through eating the dish.
I had a great food experience here! There are no reservations so when you arrive you add your name to the list and get a text in about 25 minutes when your table is ready.nI ordered vegetable toppings and added chicken for $4, which was totally worth it. The portion was generous, the flavors were delicious, and the sides especially the pickled radish were excellent.nThe only downside was sitting near the door, where it felt a bit cold and cramped. Still, the ramen was amazing and the service was very attentive. Highly recommend!
