Story

The first and only authentic Tonkotsu Ramen noodle shop in Montreal that makes everything in house (from scratch) with no MSG.
In order to make our broth, we use only top quality organic ingredients. It starts with 50 lbs of pork bones which must be individually broken to expose the marrow. It is then added together with other ingredients and simmered for 12 hours until it is reduced down to 25% of the original volume. For 12 hours it must be skimmed and stirred to ensure that it does not burn. We do NOT add starch to artificially thicken the broth.
Our noodles are the only ones to be made fresh in Montreal. Our trained personnel, use specially treated water with the perfect pH to get the perfect texture.
We also make numerous condiments to accompany the ramen and ice creams to complete your meal.
We maintain the strictest traditions in order to serve you the best, most authentic ramen.

This spot is more vibes than actual substance. Despite the tons of good reviews, the ramen was incredibly mediocre and on the pricier side. The broth lacked depth of flavour that you’d expect from a good bowl of ramen and could’ve been served hotter. The pork pieces were incredibly tough as well. The saving grace was the thin noodles which retained its bounciness and chewiness. The spicy karaage was very good. Lightly battered with extra crisp from being fried with the skin on. The seating was a bit too cozy which is ok for the type of interior aesthetics it presents but if you take off your coat, you have nowhere to put it. It would’ve be beneficial if their tables have hooks underneath where you could hang your coat or bag.
Visited on a Wednesday evening for a quick dinner with friends and left with a new favorite ramen spot.nnYokato Yokabai is a warm and cozy little hub that offers a small selection of excellent fare. The tonkotsu broth is the star of the show here and it is excellent. It is deep, rich, full of umami and with a creamy consistency that leaves a pleasant stickiness throughout my mouth. It is very, very good.nI appreciate that this restaurant lets the customer customize the preferred salt level as I often find most ramen to be too salty for my taste.nnThe karaage was good. It was crispy and juicy, topped with a light tangy dressing, and I highly enjoyed it. That said, I'm unlikely to order it again. Comparatively to a ramen bowl, the sides can be pricy for what they are and how much you get.nnMy friend ordered the vegetarian ramen and also highly enjoyed her selection. It is good to know that the restaurant offers a vegetarian option that is both high-quality and substantial.nnOverall, we had a great dinner experience with Yokato Yokabai. The staff were friendly, and we were welcomed with a great ambiance and even better food. Worth coming back anytime for the tonkotsu broth alone.
I went there with my friends and had to wait for 30 minutes, but I had no complaints! The food was absolutely amazing, and the service was excellent. The place is beautifully decorated with murals on the walls, creating a great ambiance. Overall, it was a wonderful experience!
The largest ramen shop in Montreal spans multiple levels. Despite its size, a long queue often forms outside. The ramen broth was milky thick and aromatic. The homemade noodles were chewy and slightly firm. The chashu was tender, with a savory-sweet flavor. Adding a few slices of fermented ginger condiments could enhance the depth of the umami.
I'm a big eater and ramen that I ordered was super-filling!nChicken pieces were more than enough, broth was flavourful, and overall quantity was good.nnI would love to come again to this place.nnRecommendations:n- Ramenn- Grape Soda watern- Spicy fried chicken side dish
