Revolver

Story

Inspired by some of the world’s most influential cafes, from Japan to New York to Montreal and back, Revolver is the brainchild of owners and operators, the Giannakos family. Situated on Gastown’s vibrant Cambie St., Revolver places a heavy focus on it’s progressive yet simple coffee program, proudly doing so on a menu of less than 10 items. Every single cup of coffee is made individually, only after it has been ordered – never before – through various brew methods and a rotating seasonal coffee menu from leading roasters around North America. Every coffee available on the menu (and many that are not) are put to the test every week in a blind tasting that determines whether or not it will be offered the following week. This insures that only the best tasting coffees of the moment are being served. No variable is left unmeasured as every detail in the brewing process is closely monitored using various scales, timers, and ratios – the key to providing consistency. From using exposed plumbing and electrical, to the open laboratory styled brewing bar, through to using glass instead of traditional ceramics, the cafe is designed to provide full transparency both in design and in the experience. Customers are thrown into the middle of all the action as every drink is brewed in full view on a 20+ foot bar top that stretches through most of the room, made entirely of reclaimed B.C. Fir. In addition to coffee, Revolver pays the same respect to it’s tea program (most of which are directly sourced through a tea buying group) as well as providing an array of pastries and baked goods from West Vancouver’s Cafe Crema. In the end, Revolver is about two things: coffee, and the experience that should come with it.

My wife and I hit up Revolver early on a Thursday morning. We each ordered flat whites to go, hers with almond milk, mine with regular dairy. We both chose a single Origen Mexican espresso for the shots in our drinks. There was a slight miscommunication regarding our drink preferences with the staff person who took our order, but she caught it and was quick to correct it by refunding an overpayment. We also got a lemon loaf and piece of chocolate cake to go. The coffees were sublime. My wife said hers was one of the best she’s ever had. They were smooth, perfectly balanced, and made quickly. The baking was also very good - dense, substantial, and great flavours. It’s totally understandable why Revolver has the excellent reputation that it does as one of Vancouver’s premiere cafes.

Love the vibe and interior of the place. Coffee is exceptional, doesn't matter what you order. I usually end up ordering the latte. The latte is well blended unlike any other coffee shop I've been to. Nicely blended coffee and milk, texture and flavour is amazing, and you can't taste the milk and coffee as a separate entity. Other coffee shops, you can taste the distinction but at Revolver, their baristas know their stuff. The flavour is complex yet blended to perfection. I will be back.

Not a huge coffee guy but had to come due to reviews. This is not coffee. It's something else, tastes amazing. It was probably the most smoothest coffee I've ever had, just went down like water. Its a nice coffee brewery where they brew it fresh front of you, but tiny spot so I'd imagine during weekends and peak hours you would want to get in and go out. There is another part of the side that has more seating room. But for a quick grab n go, this is a must hit if you're around the area. Wish they had these in Los Angeles.

Excellent coffee shop! Tasty small bites, nice ambiance, and the baristas are very experienced with pour over coffee. You can tell by the time attention they take with each drink they know what they're doing and they are doing it well! Would love to come back here the next time I am in Vancouver.

Best baristas in the city always serving up different roasts that vary from local to out of the country. So many options if you prefer a certain brewing method and you can even order a sample board of different roasts they are currently doing. It's a cool spot that I always recommend to friends who are new to the city.
