Qin Xi'an Noodles is possibly one of my favorite noodle places! I tried the Braised Beef Noodle Soup and it is quite possibly the best thing I've ever eaten in my life. The broth was so rich and flavorful, and the noodles were perfectly cooked. The beef was tender and fell apart in my mouth, and the veggies added just the right amount of crunch to the dish. The whole combination was just magical! The restaurant itself was sort of hole-in-the-wall/mom and pop. Overall, I'd highly recommend Qin Xi'an Noodles to anyone looking for unforgettable noodles.
This restaurant really blessed Capitol Hill with the best hand pulled noodles!!!! I got their braised beef brisket hand pulled noodle soup and stewed pork sandwich and they were both DELICIOUS. They were both so flavorful and the noodle soup was perfect for the rainy Seattle day. The pork sandwich was juicy and soft on the inside with a crispy bun on the outside. So perfect! I regret not coming here sooner. The restaurant seems to be run by an older couple and they are sweet. The lady reminds me of my aunts who fuss over me and make sure I have enough food to eat so this place really feels like home. Definitely recommend stopping by!
Seeing as noodles are my favorite food, the vast amount of noodles I eat usually disappoint. But I can say without a doubt that this place has some of the best noodles I've ever had I specifically got the Biang Biang noodles. The shop is owned by this very cute couple, and has the perfect level of cute jank-ness where you know you're going to get home-y, amazing Chinese noodles. Also so freaking cheap dinner was $12! COME HERE
The noodles were good, let's get that out of the way. I tried the spicy noodles and they didn't taste very spicy. I decided to "upgrade" to add sliced beef to my noodles. The amount given was comical. You pay $3 extra for basically what looks like what is found at the bottom of a beef jerky bag. Skip the add on. The service was very slow, but overall nice. It's difficult to justify a return trip to Qin Xi'an noodles with so many other great options for these dishes in the area.
One of the best noodle shops I've been to! So authentic. This is more like 2-person mom and pop shop so it can get busy real quick but once you step into the shop the smell will keep you there until you get a table. Oh I don't think the owners speak much English outside of the normal greeting and ordering things, so be patient with them.
The most authentic Xi'an noodles ever! - from my SO who visited Xi'an and lived in China for a few years. People should be lining up to eat here. The owner is a sweet man and hand pulls the noodles like a pro. It's like watching an art form, the repetitive pull and tap on the table, flouring his hands while keeping the rhythm going, the noodles getting longer and chewier with each pull. Then into the wok or pot they go and out comes a steaming bowl of delicious and uber fresh noodles. The vibe here is low-key, very chill. It's just a small shop on the top of a hill, tucked between other stores. It definitely deserves more hype for the food, for the man who pulls the noodles, and the experience of sharing a meal of delicious food.

Qin Xi’an Noodles is an unexpected gem — a real mom and pop shop with a very sweet couple running everything in the store together. The biang biang noodles are hand pulled I think to order, by the looks of it!, and the flavors are delicious, fresh, and strong. My friends and I enjoyed everything we got — cumin beef biang biang noodles, liang pi, fried rice, and homemade dumplings. Especially considering the amount of skill and hand labor that goes into all of these dishes, the prices are very fair and the portions are good. I’ll definitely be back to try the lamb skewers, lanzhou noodles, and beef tendon and shank, dishes that can be harder to get in the US. Overall, highly recommended checking this restaurant out for a delicious and filling meal!
The couple running this place is so sweet and you can see them hustling in the back making the noodles fresh. I enjoyed the thickness of the biang biang noodles + flavor of the sao zi and pork sauce. A tiny bit salty but that's ok. What turned me off was there was a huge pool of oil at the bottom of the bowl so we couldn't finish the last bits of the meal - all the meat was swimming in it. We also ordered a beef brisket hand pulled soup which was spicy and perfect for a cold day. The noodles were 4 stars, minus a star for the oil, but +1 star again for a sweet mom and pop shop.
Great little noodle shop in Capitol Hill. The noodle and spice level of the beef hand pulled noodle soup C4 was very good, but the beef was a little dry. The ambience of the restaurant is simple and the owner was very kind.
