La pâtisserie-boulangerie Wawel a été fondée à Montréal en 1984. Son fondateur, Peter Sowa, n'avait que 24 ans, mais il était animé du désir de faire connaître ses spécialités. Il a hérité son savoir-faire en pâtisserie de sa famille qui possédait deux pâtisseries en Pologne, son pays d'origine. De plus, des voyages en Autriche lui ont permis de perfectionner son art.
C'est grâce à sa persévérance, l'excellence de ses produits, son innovation et sa quête de la perfection que le nom de Wawel est devenu aujourd'hui synonyme de qualité partout au Québec. En effet, à chaque jour, c'est dans la plus pure tradition européenne , avec son Chef Patissier Francais, que naissent tous les produits afin de satisfaire une clientèle étendue et grandissante et de plus en plus exigeante du point de vue de la qualité, de la fraicheur et de la santé.
