Fine French Pâtisserie in Halifax

Story

Geoffroy Chevallier is a young French Chef from Rouville, a small town North of Paris, where he began building his pastry experience 15 years ago.

He started the art of pastry In France working with various chefs, perfecting this skill. Had the opportunity to come to Canada to learn English and held position as assistant pastry chef at the Keltic Lodge.

He has travelled across the world to New Zealand, showcased his pastry skills for the James Beard Foundation in NYC during the Relais Château, and has made Halifax his home for the last 5 years, working at different establishments such as Seven Restaurant, Botticelli’s, Sebastian’s Bistro and Pastry Chef at the Marriot Harbourfront Hotel.

Last year, Geoffroy had the opportunity to enroll at the Alain Ducasse School of Pastry in Paris, to up grade his skills.
Currently back in Halifax, Geoffroy is working to open a French Parisian Pastry Shop.

Recommended by a Quebecer in the neighbourhood for having the best croissants, I just had to stop in. Great service, clean, nice display of food, open concept in kitchen. A large window for watching what's going in outside, is available, if that's your thing. Other clientele were also very cordial. I had the almond croissant, which had the right mix of ground nuts, not a paste. Five regular croissants are going with me.

Walking by...saw the sign and stopped in. Had the best Hazelnut Eclair ever ! Highly recommend it!
