A Tandoor is a cylindrical clay oven used in northern India in which food is cooked over a hot charcoal fire. Temperatures in a tandoor can approach 900F (480C). The distinct color of our popular dishes at the restaurant comes from Cayenne, red chili powder and other spices. These appealing colors are formed by the spices, cooked over intense heat. Traditionally "tandoor" dishes are moderately hot, but the level of hotness is toned down to a "mild" taste level, artfully preserving their flavors. Food cooked in a tandoor retains all the juices and taste inside, hence is considered a healthy diet.
