Notch8 is a west coast classics restaurant and bar. Located in the heart of the Fairmont Hotel Vancouver.

Story

With a luxurious and contemporary design inspired by the romance of travel in the 1930’s, Notch8 Restaurant & Bar brings a new era of glamour to the lobby of Fairmont Hotel Vancouver. Named after a train’s top speed, achieved only by the most skilled conductors, the restaurant pays homage to the hotel’s storied history and legacy as a luxury hotel along the Canadian Pacific railway.

Notch8 features West Coast cuisine, with many dishes representing the westward journey across Canada.

Behind the bar, vibrant cocktails made popular during pre and post prohibition times are being shaken up with local bitters.

Deep menu & lots of variety. Need to try everything on this menu because it all looks amazing! We had the wild boar and octopus which was $$. Chill, relaxed atmosphere. Can be either upscale or casual. Staff is super friendly. Happy hour is solid too. One of the best hotel restaurants we've been to.

The three of us including my husband and my sister decided to treat ourselves to a Sunday night "dine out" experiences at the Notch8 restaurant Downtown. We ordered the 3-course set meal, everything went well with the appetizer beside the waitress seem to be unhappy waiting our table. The main course was where the nightmare began. I ordered the steak to be made medium rare. After a few bites I realized my steak was super chewy and overcooked. I asked the server to come over and look. She explained to me this is how it is done with everyone's dish and refused to make me a new steak. I complied and said fine can i order something else off the menu to replace the main course. So, I ordered a normal price main course on the menu, which was fine. When we asked for the bill, I was expecting them to credit the main course form the “dine out menu” out from our bill, but instead they charged me full price on everything including the steak I didn’t eat. I talked to waitress again and she began to be rude and said we have no rules like this! If you have any problems talk to my Manager. After a few min, the manager came over and explained that I ate more than half of the steak, and refused to refund. This is where I got disappointed and angry. This is the first time I dealt with a such unreasonable and irresponsible staff at a well-known restaurant. In conclusion after all the fiasco, the manager decided to only take 10 dollars off our bill to compensate for the "dine out menu" which is a total disrespect to their customers.

Service friendly and decor is beautiful. The afternoon tea was movie-themed which I found to be delightful as it was Oscar season. Tastewise I preferred the savoury selections. The sweet offerings were delicious as well; tea was flavourful.

A brilliant Dine Out Vancouver menu with fantastic wine pairings. Tremendous staff and ambiance. A must try for foodies in Vancouver looking to appreciate locally sourced delicacies.

This is a review of its bar, as menu and setting differs from the dining area. Very limited bar menu, both food and drinks. Food is just average, not what is expected from a Fairmont hotel. Many guests were standing, not sitting. The reason — its high chair is a challenge to sit on, one would slip off it easily.
