Prairie Dog Brewing is a neighbourhood brewpub opening on 58th Ave SE early 2018. In everything we do we want to learn, educate and insure the highest quality possible.
Our Brewmaster is working on a beer menu focusing on variety, with traditional English, American, and European styles as well as edgy examples having high hopping rates and ingredients like local honey, sugar beet, coffee, chocolate, and hot peppers.
Our Red Seal Chef has created a menu of "low and slow" items specializing in smoked meats like brisket, and pull pork accompanied by seasonal and beer oriented sides and sauces. He has integrated Prairie Dog beer into many of our menu items.
Barrel-aged and wild/sour beer will become a focal point of the brewery as it matures. Several guest taps will offer interesting beer from the local area and abroad. All brewing will take place in full view of customers. Ownership will be involved in day-to-day operations and will receive face-to-face customer feedback.
Brewpub staff will be trained and incentivized to become Cicerone Beer Server certified, the gold standard in providing key credentials for servers, ensuring quality Beer Server knowledge and expert customer advice on different brewing techniques, taste and food pairings. The brewery will feature a quality management program superior to that of most other area breweries
