New Delhi Diamond's restaurant opened in 1993 at its current location, 106 Green Street in downtown Ithaca, New York. The restaurant is still owned and operated by the Sekhon family, who are originally from Ludhiana in the Indian state of Punjab.
Their ongoing mission has been to offer authentic North Indian cuisine to the Ithaca community. The diverse menu offers a wide variety of vegetarian, chicken, seafood, and lamb dishes. Many of the dishes are prepared in a tandoor, a traditional Indian clay oven.
India is a vast country with many ethnic groups and cultures, and the cuisine varies from region to region. New Delhi is in northern India and is used in the restaurant's name to reflect a menu of North Indian cuisine. "Diamond's," in the restaurant's name, comes from the similarity between the preparation of Indian cuisine to the process of changing a diamond from a rough stone into a faceted gem. Traditional Indian cuisine also has to be prepared with great care and patience
