CHEF BIOGRAPHIES
Chef Michael Brownlee’s passion for cooking and utilizing local and fresh food developed at a young age. His working for his grandparents at Rudy’s Fruit and Vegetable Farm helped him gain a true understanding of the quality of locally grown ingredients. He began his studies in 2010 at the Culinary Institute of Canada, one of the most well-known and respected culinary arts schools. Chef Michael after four years has completed his Applied Degree in Culinary Operations.
Chef Michael began his formal training at Weczeria Food and Wine in Saskatoon, Saskatchewan. This restaurant is known to be one of Saskatchewan’s top eateries, receiving many rewards such as the “Golden Plate Reward” for excellence in fine cuisine. This had furthered Michael’s passion for working with fresh and locally sourced ingredients.
During the summer of 2012, Chef Michael worked at the 4 diamond rated Inn at Bay Fortune in Prince Edward Island, which has been recognized as one the top rated restaurants in Canada and has won numerous awards. Building on existing skill sets; he has broadened his knowledge of the fundamentals of fine foods and was challenged every day to utilize ingredients that were locally produced and seasonal, mostly found in the Inn’s garden.
This summer of 2014, Chef Michael is excited to bring his talents and knowledge home to Pasquia Park, Saskatchewan by opening Sprout Eatery at Pasquia Park. He hopes to utilize his extensive skills and knowledge of gardening to grow and maintain the garden, a feature of the restaurant.
