Le Pilsen Pub à travers le temps





Le bâtiment abritant le Pilsen a connu diverses vocations, bien avant de devenir l’endroit de prédilection des gens aimant bien manger et bien boire, dans un cadre enchanteur.

Érigée à la fin du 19e siècle, notre structure hébergeait dans ses murs, une manufacture de calèche à chevaux. Lorsque l’automobile fit son apparition et remplaça graduellement le cheval, Clifford Reed, alors maire de North Hatley, transforma cet atelier en une quincaillerie. Prospère au cours de nombreuses années, la quincaillerie du village de North Haltey devait cependant fermer ses portes en 1982.

Vacante durant trois années, notre structure allait connaître une nouvelle destinée. Cent ans après l’émission des permis brassicoles de Labatt et Molson, deux résidents de North Hatley, Peter Provencher et Don Fleicher obtenaient la troisième licence émise au Québec, créant du même coup ce qui allait devenir la première micro brasserie de la province. Ses fondateurs ont choisis de nommer leur enreprise PILSEN, du nom de la ville de l’ancienne Tchécoslovaquie (PIzen) , d’où l’origine de la première bière, au début des années 1600.

La brasserie éventuellement, déménagea en 1986 et le bâtiment allait expérimenter à nouveau le changement. La famille Péloquin s’en porta acquéreur et ces derniers la transformèrent en un restaurant ainsi qu’en un Pub et choisirent de conserver le nom de Pilsen.

À l’aube de son vingtième anniversaire, le Pilsen allait connaître de nouveaux propriétaires. Au mois d’avril 2006, quatre épicuriens, messieurs Fugère, Giard et Lajoie s’en portèrent acquéreurs avec la mission de perpétuer l’excellence de sa table de la jumeler à des vins et bières de haut niveau, le tout servit dans une ambiance conviviale empreinte de cordialité et de bonne humeur.

We’ve been to Pilsen with friends twice in the last 6 weeks or so. The ambiance is great, and the service is good. Their tuna tataki plate was excellent. Definitely ordering that again! However, their bavette was a little overcooked both visits. Instead of medium rare, they were medium. Their mud pie was absolutely divine though!
Second visit and it's still excellent. We sat upstairs in the new dining area and it was delightful. Food was excellent and service also in spite if the fact that there was one waitress and about 12 tables she did an excellent job.nThis is a somewhat limited review since we only had the French Onion Soup and the House Smoke Salmon...both of which were excellent. The soup was served nice and hot with local melted cheese on top. Just the right balance between broth and onion flavor. Crotons were large enough that they didn't end up as tiny specks of mush in the bowl, which was perfect.nThe house smoke salmon was impressive. I like my smoked food to have that real smoked flavor and this salmon delivered the smoke and the salmon flavors in unison and it was served with very fresh toasted slivers of bread to put it on, I may have dreams about this!nThe service was excellent we were promptly greeted and told to pick any table we liked. Even though it was a bit breezy and cloudy we did opt for sitting outside which was nice. My only gripe is the outside patio could use a power washing and the hanging baskets need some love, minor details. The inside I would describe as rustic rather than elegant but I am about the food not the decor. The waiter was busy but very attentive to every table. I like waiters that make being very busy look as smooth and easy as this guy did, definitely a pro.nWe will return and have a full lunch or dinner in the near future.
I had the duck meal, which was lovely. However the vegetables & potato serving size was lacking, in my opinion. My friend had the salmon tartare, which she enjoyed. Great covered patio above for when it rains & open patio below.
Visited the place for the first time and highly recommend by our BnB host. The place was beautiful and we’re sitting facing the lake. We love it. My Tuna and Octopus plate is really good. I enjoyed it a lot. My husband’s dinner was good also, soft and moist ribs. Thank you for hospitality! Love to come back some day.
Our go-to place during our week stay in North Hatley for a family reunion. Service was excellent, food was amazing, and the space was relaxing. I took my wife to dinner for her birthday on Saturday night and we dined on the top floor, which is very modern and stylish. We had a wonderful meal that was topped off by great service. Throughout the week, my family and I found ourselves relaxing on the back terrace often, enjoying the view and the drinks. We were made to feel so very welcome by the owner and staff.
