LA CUISINE VIETNAMIENNE
Le Viet Nam s’étend sur plus de mille milles du nord au sud de la côte est de l’Asie. La diversité du climat ainsi que la grande variété des produits alimentaires ont contribué au développement d’un éventail de recettes qui se sont raffinées au cours des années et ont donné une cuisine classique distincte.
Les rouleaux impériaux vietnamiens CHA GIO (on prononce ChaZaw) ainsi que le CHAO TOM, une pâte de crevettes assaisonnée et enroulée autour de canne à sucre, sont reconnues comme des plats typiques de l’art culinaire vietnamien.
Les recettes de CHA GIO et de CHAO TOM et tous les autres plats demandent les ingrédients les plus frais et les plus naturels. L’utilisation d’huile est réduite et on n’utilise pas le MSG.
Le NUOC MAM (on prononce Nyak Mahm), une sauce salée de couleur ambre qui est faite de poisson, est un des ingrédients caractéristiques de la cuisine vietnamienne. On l’utilise au lieu du sel pour la cuisson et comme trempette pour rehausser la saveur de presque tous les plats.
Ce qui caractérise aussi le repas vietnamien est l’utilisation des doigts pour envelopper la nourriture préalablement préparée, en particulier les viandes grillées, de feuilles de riz ou de laitue dans lesquelles on place également une variété de RAU THOM (un terme général pour désigner le basilic, la coriandre et diverses sortes de menthe ou d’autres épices). Les rouleaux ainsi obtenus sont alors trempés dans la sauce NUOC MAM avant d’être mangés. Cette combinaison de légumes frais et d’ingrédients cuits fournit un contraste et un équilibre parfaits de saveurs.

ABOUT VIETNAMESE CUISINE
Viet Nam stretches over a thousand miles from south to north along the south eastern coast of Asia. Its wide climate range and great variety of edibles have made possible the development of a unique array of recipes which have been refined, over the years, into a distinctive classic cuisine.
The Vietnamese Spring roll CHA GIO (pronounced Cha Zaw) and CHAO TOM, flavoured shrimp paste wrapped around sugar cane, are recognized as hallmarks of the Vietnamese culinary art.
The recipes of CHA GIO, CHAO TOM and all the other dishes demand the freshest and most natural forms of all ingredients. The use of oil is miniscule, and there is absolutely no MSG.
A characteristic of Vietnamese cuisine is the extensive use of NUOC MAM (pronounced Nyak Mahm), which is an amber coloured and salty sauce made from fish. It is used in place of salt, both in cooking and as a dip, to enhance the flavour of almost of all dishes.
Also unique to the Vietnamese meal is the use of one’s fingers to wrap prepared food, particularly with grilled meats, in rice paper or lettuce with a variety of “RAU THOM” (a general term for basil, coriander and different kinds of mint and other flavoured leaves). The rolled concoction is then dipped in NUOC MAM sauce as it is being eaten. The combination of fresh vegetables and cooked food provides a delectable balance and contrast of flavours.

Flavourful and at a good price. Fresh vegetables with good and balanced sauces. Order the combo for 4 and you’ll have enough for everyone under 70$.
It was my first time there. The pho was very good. The broth was flavourful. The beef tender. And the vegetables fresh. Only complaint was that the soup wasn't identified on the menu. I had to guess based on the description of the ingredients.
One of the best restaurants in the region, especially if you're a fan of Vietnamese cuisine. You got to try their spring rolls too!
Unassuming family run restaurant with lots of traditional Vietnamese fare. Food is tasty and prices very reasonable. Service is fast and efficient woth a smile. Decor is somewhat dated therefore a coat of fresh paint is required in order to liven the atmosphere.
Had better pho. I also ordered grilled meat and it did not taste good. The rolls are average. I felt cheated for the price paid. I give two star because I ate everything on my plate.
I ordered vegetable spring rolls and didnt recognize what they were. The coconut shrimp curry was a 2 out of 10. And wonton soup was not very flavorful. 3 out of 10 . Very disappointed
This is my go to spot for Vietnamese. Staff are always friendly and the atmosphere in the restaurant is awesome. The food is always very good and fresh with a large menu. It’s one of the best places for Vietnamese in the Gatineau/Ottawa area.
