We’ve taken a look at the small town prairie diner, and asked, “Where can we innovate? Where can we take the idea of diner food to the next level?” That’s what excites us.Call it a masquerade, call it a ‘bait-and-switch,’ our aim isn’t to improve upon an already perfect concept, but to elevate the experience, paying it the highest respect.
