Over 200 years ago, four distinctive culinary traditions came together to create a distinctive , unique and yet cohesive cooking called "French Creole cuisine".
With the influence and combination of the Tainos, who made used of wild life stocks and the abundance of seafood, the introduction of French technique such as roux , butter and cream to the islands, follow by the Spanish who brought citrus, beans, coffee, chocolate and tomatoes and without mentioned the African with peas, root vegetables and open air cooking method .
The food of French Caribbean is a wonderful example of how a multitude of influences can combine to an incredible unified and coherent cuisine. We carefully blend our own spices, seasoning and handmade all our ingredients.
