About Full service butcher of natural hormone and antibiotic free beef, dry-aged to perfection and cut-to-order. Story Silver Sage Beef was launched in April 2011 as a full service beef shop in the Calgary Farmers' Market. We have the complete range of beef cuts available, with a butcher on duty full time for custom orders. The beef in our shop comes from the 100-year Zentner family ranch located south of the Cypress Hills. "Prairie Beef – Naturally" is an apt summary. Our cattle are raised naturally on wholesome prairie grass, we do not use artificial hormones or antibiotics and we dry age for flavor and tenderness.
