Le Bilboquet was founded by Carole Lavallée and Yves Lebuis in 1983. Bilboquet aims to make the best ice cream and sorbets in Montreal. Everything is homemade with local products. Le Bilboquet has a lot of partnerships with local companies, such as Point G and Les Glaceurs. Exceptionally for this year, Bilboquet is opened during the winter season due to the collaboration with Harricana par Mariouche to create a pop up shop. The collaboration will last for a period of 4 months, in other words, from mid November to March 1st. After March 1st, Bilboquet will be back with its famous Maple Taffy ice cream.
